Vegan Oat flour Scones

INGREDIENTS:

  • 1 cup gluten-free rolled oats
  • 1 1/2 cups of Just About Foods Oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon of ground cinnamon
  • 2 ripe bananas
  • 1/4 cup non-dairy milk
  • 3 tablespoons of almond butter
  • 1 teaspoon vanilla extract
  • Chocolate chips (optional)

PREPARATION METHOD:

Preheat your oven to 350°F. Line a baking sheet with parchment paper. In a mixing bowl add your oats, oat flour, baking soda, and cinnamon. Whisk to combine. In a stand mixer, paddle attached, mash the banana. Add your milk, nut butter, and vanilla to your wet mixture, and next add your dry ingredients. Blend until just well combined. Scoop out the batter into the pan. Form about an  circle or so or any shape you´d like to. Sprinkle the top with chocolate chips and bake for 25 minutes. Remove and slice into pieces and bake for an additional 10 minutes to get a crispy golden finish. Enjoy!
