Ingredients:
- ½ cup Just About Foods Chickpea Flour
- 1 ¼ cup plant-based milk
- 2 tablespoons apple cider vinegar
- ½ teaspoon salt
- 1 tablespoon nutritional yeast
- 2 tablespoons finely chopped chives
- Freshly ground pepper
- Vegetables of your preference for the filling
- Cooking spray
Instructions:
- In a medium bowl, whisk the chickpea flour, plant-based milk, vinegar, salt, and nutritional yeast until a batter is formed; add the chives and mix.
- Heat a non-stick pan over medium heat, add cooking spray, pour half of the batter, and spread into a pancake-like shape.
- Add vegetables for the filling only in half of the circle, cover the pan with a lid and lower the heat to low. Let it cook for 10 minutes or until set in the middle. Fold the omelet in half making sure the bottom of it is golden brown.
- Carefully transfer the omelet to a plate and enjoy!
