Zucchini Corn Fritters

Ingredients: 

  • 3 medium size zucchinis  
  • 1 cup canned corn kernels 
  • 1/2 cup Just About Foods Chickpea Crumbs 
  • 4 eggs 
  • 1/4 cup chopped chives, plus more for garnish  
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder 
  • 1/4 teaspoon pepper 
  • 1/2 teaspoon salt 
  • Vegetable oil  
  • 1/2 cup sour cream  

Instructions:  

In a medium bowl, grate the zucchini, add 1/4 teaspoon of salt, and toss. Let it sit for 10 minutes. 

In a separate bowl, combine corn, Chickpea Crumbs, eggs, chives, garlic powder, onion powder, pepper, and 1/4 teaspoon of salt. Using a clean kitchen towel or cheesecloth, squeeze out as much water as possible from the zucchini. Add the zucchini to the mixture and mix well. 

Heat 4 tablespoons of vegetable oil in a pan over medium heat and spoon the mixture to form patties. Cook until golden brown on both sides, about 4 to 5 minutes per side. 

Serve with sour cream, garnish with more chives, and enjoy!
