Zucchini, Spinach & Feta Muffins

Ingredients.

  • 2 cups – Just About Foods Oat Flour 
  • 3 cups – zucchini grated
  • 125 g – spinach (chopped)
  • 2 pieces – egg
  • 4 tsp – baking powder
  • 1 cup – feta cheese
  • 1 cup – milk
  • ½ cup – parmesan cheese
  • as wished – salt and pepper

Instructions.

  1. Preheat your oven to 180º and grease a muffin tray.
  2. In a medium bowl, combine eggs and milk, mix in your zucchini, spinach and cheese. Season with salt and pepper.
  3. Mix in your flour and baking powder, mixing just until combined.
  4. Scoop your muffin batter into your prepared muffin tin, filling almost all the way to the top.
  5. Bake for about 20-30 minutes or until cooked through.
  6. Allow to cool before removing.
  7. Serve warm and enjoy !
